Most home bakers price a cake by adding up the ingredients and multiplying by something. It feels reasonable, and it is how a genuinely skilled business ends up earning less than minimum wage without ever noticing — because the one cost that never appears on a receipt is the four hours you spent.

What “ingredients × 3” actually does to you

Here is the worked example from inside the file — a layered cake, 3½ hours of work, priced at an $18/hour rate.

Read those last two lines again. The folk rule says charge $27.70 for a cake that costs you $75.53 to make. You would be paying roughly $48 for the privilege of baking it — and the busier you got, the worse it would be.

The rule isn’t stupid; it’s just built for bakes that are expensive in ingredients and quick to make. The moment your skill is the main input, it collapses.

What hourly rate should I use?

Whatever you would accept to do someone else’s baking for an afternoon. If a number feels too high to charge, that is worth knowing before you take the order, not after.

My prices would be higher than local bakers’.

Then you have learned something real: either they are quicker, buying at wholesale prices, or not paying themselves properly. The sheet tells you what your price needs to be — what you do with that is a business decision, but it should be a decision rather than an accident.

Does it work for cookies, brownies, bread?

Yes. Nothing in it is cake-specific except the wording. Batch bakes work well — set servings to the number of pieces.

Is anything I type sent anywhere?

No. It’s a file on your computer. This site has no trackers, no analytics and no cookies.
